Easy Hot Dogs & Kale

We try our best to eat healthfully, but sometimes that means taking an old standby and incorporating a new vegetable. Since we don’t consume gluten, and we rarely eat GF buns, this easy Hot Dogs & Kale recipe provides a way for us to enjoy the convenience of hot dogs while including some extra greens in our diet.

Over the years, we’ve steered away from vegetable oils in favor of healthier fats. Lard is a common staple in our household due to its neutral flavor and relatively high smoke point. Pasture-raised lard also contains high amounts of vitamin D.

Start by heating a 12-inch cast-iron skillet (or another pan with a tight-fitting lid) on medium heat with your preferred cooking fat.

Once the fat is melted, empty the contents of the kale bag into the skillet. Add the water and salt. It can be tricky to fit all of the kale into the pan, but don’t worry! It will cook down significantly. I usually press the kale down with the lid and hold it firmly in place for a couple of minutes. You can also use a bigger pot if you desire.

While steaming the kale and waiting for it to cook down a bit, prepare the hot dogs. We like Aldi’s Organic Uncured Beef Hot Dogs. I usually cut them into quarters, as it’s easier to divide amongst our kids. The hot dogs also tend to retain their juices a little better when kept in larger pieces. When the kale is al dente, add the hot dogs and stir. This really adds a lot of flavor to the kale.

Replace the lid and continue heating for an additional 3-5 minutes until the kale is tender. Once it’s done, stir it and dish it up onto your favorite Corelle plates!

This recipe has become an easy weekend meal for us. It doesn’t take too long to prepare, and my teenagers can even make it! We often enjoy Hot Dogs & Kale with a side of mac ‘n cheese, sweet potato fries, baked potatoes, or rice.

  • 1 Tbps Cooking fat
  • 1 16 oz bag Kale
  • 2 packages All-Beef Hotdogs
  • 1 cup water
  • 1/8 tsp salt

Equipment

  • 1 Skillet with tight fitting lid

Method
 

  1. On medium heat, melt your desired cooking fat in a skillet. We use pastured-raised lard.
  2. Carefully add the kale to the skillet. Add water and salt to taste.
  3. Quickly secure the lid and press down for a minute or so while kale begins to wilt. After a few minutes, lift the lid to stir and replace it to continue steaming.
  4. Cut the hotdogs into quarters.
  5. Once the kale is al dente, add the hot dogs and stir, cooking for a few more minutes to combine flavors. Add more water if needed.
