Method
- On medium heat, melt your desired cooking fat in a skillet. We use pastured-raised lard.
- Carefully add the kale to the skillet. Add water and salt to taste.
- Quickly secure the lid and press down for a minute or so while kale begins to wilt. After a few minutes, lift the lid to stir and replace it to continue steaming.
- Cut the hotdogs into quarters.
- Once the kale is al dente, add the hot dogs and stir, cooking for a few more minutes to combine flavors. Add more water if needed.
