Easy Lentil Curry & Rice

Ingredients
  

  • 1 lb Brown Lentils
  • 1/2 Yellow Onion
  • 1/2 Jalapeno
  • 1 tsp Curry Powder
  • 1 tsp Ground Cumin
  • 1/2 tsp Ground Coriander
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Ground Turmeric
  • 2 tsp Salt
  • 6-8 cups Water
  • 1/2 bunch Cilantro Optional
  • 2 cups rice, uncooked

Equipment

  • Stock pot or pressure cooker

Method
 

  1. Cook rice according to package directions.
  2. Rinse lentils, keeping an eye out for any debris or pebbles.
  3. Chop the onion and jalapeno.
  4. Add lentils, onions, jalapeno, spices, and salt to the pot.
  5. Add water.
  6. Cook according to your desired method: For stovetop, simmer for 30-45 minutes until tender. For Instant Pot, cook for 8-10 minutes on high, allowing pressure to release naturally.
  7. Add chopped cilantro and a squeeze of lemon juice, if desired.
  8. Serve over rice.
